Linda,

This is the first time I've tried posting.  It took me a very long time to
successfully join, so I was afraid posting might be fraught with the same
problems.

About the acidic taste of salsas, I agree that it is better to use lime
juice when you can (except for obvious sauces like a Louisiana-style).
Also, adding a bit of sugar will help.

One thing I can't quite get right, is, the salsa is quite.. 
acidic? Does that make sense?  I want it to be smoother, not so 
sharp tasting. This is apart from heat, which I like.
