The Texas Land & Cattle co has a 'pepper smoked sirloin' that is without doubt the best cut of meat I've ever eaten. You can also trust me when I say that I've eaten quite a few steaks in my time ;-) I ordered it by accident with CaJohn while down there- we were both trying to figure out how in the world they'd have smoked a sirloin with *what* kind of chile. Felt kind of dumb when they put it down in front of us & realized that they meant BLACK pepper, not chile pepper. Hard to think outside the box sometimes :-) -Jim C Mild to Wild(R)
