I've only just returned from vacation, so I want to thank those who 
replied to my kimchee request.  I saved the suggestions, and will give 
it a try.

There seems to be two approaches:
   o pepper-pickled
   o pepper-fermented
The latter needs a starter culture (Korean grocery)
