Get the raw materials and enjoy making your own blends! Get onion powder, garlic powder, pepper powder (heck get a lot of different pepper powders), dried herbs, etc. Mix these with salt and see what you like. For a fajita seasoning you'll probably want cumin powder, too. Do a little web searching and you should be able to find loads of seasoning recipes.
