Wow - two emails to Byron! Nice meeting you at the OF BTW.

I grow chimayo just for the flavor. IMO they are the best tasting NM 
chiles bar non. They are mild however. Perfect for that red chile you 
want to serve at a potluck (as opposed to hotluck!) Mixed with the 
above chipotle... now I'm drooling. Time for breakfast.
