"Peppers the Domesticated Capsicums" quoted Engle on page 67. Her book 
is where I read to keep pods a month past fully ripe for seed harvesting.

Another item from the article worth remembering,  is that some chiles 
don't have a dormant period.   My guess is this is why you find some 
seeds starting to root inside the pod.
