"LAYERED" GUACAMOLE DIP

INGREDIENTS

4-5 Roma tomatoes, chopped
Sour cream
"La Sierra" Brand Refried Beans with Chipotle 
(add a little water, mix and warm for a minute or 
so in the microwave) - Substitute your preferred 
refried beans.
"Classic" Brand Guacamole (from grocery-store 
produce section refrigerated area, usually)
Chopped scallions
Chopped jalapeņos (seeded, if desired)
Black pepper
Fresh lime juice
Grated sharp or extra-sharp cheddar cheese

PROCEDURE

On a large round serving platter (16-18 inches 
diameter), starting from the outside working in, 
assemble the chopped tomatos in an outer circle, 
the refried beans in a circle next to them and 
the sour cream in a third adjacent circle.  Then 
fill the center with the guacamole.  Sprinkle the 
chopped jalapeņos and scallions on top, and grind 
on some fresh black pepper.  Squeeze lime juice 
onto everything, and top with the grated cheese. 
Serve with tortilla chips.  Note: If you can't 
obtain "Classic" brand guacamole, substitute 
mashed plain avocado.
