There is another factor called GDD or Growing Degree Days. Daytime High - (minus) Night time low/2 = GDD The main factor is night time low temps. If your night time temps are above 60F your pods will ripen a lot faster than if your night temps are in the 40's: IE Current temp is 66F, last night was 56F, my GDD = 5 L.B.
