I'm all over the map.  While taste is always the prime consideration heat might be nonexistent or scalp-sweating hot.  When i'm in the mood for mild I wouldn't want the outrageous heat employed by SandyO's moderate corps.  But when I want heat-heat-heat, I've been known to coat chicken wings with Backdraft or DaBomb.
