[CH] Spicy Tomato Spread

SPICY TOMATO SPREAD

Serves 6

Chef Burhan Oglu of Konak restaurant in Istanbul hails from far
eastern Turkey, where flavors tend toward the hot and peppery. This is
a spicy spread he serves at room temperature with warm bread as diners
await their main courses.

3 medium tomatoes, quartered

1 yellow onion, coarsely chopped

1 cucumber, coarsely chopped

1 jalapeno, stemmed, seeded

1/2 cup chopped flat-leaf parsley

Red pepper flakes, to taste *I use Aleppo Chile powder

6 ounces tomato paste

1/2 teaspoon coarse salt

• Place all ingredients in a food processor; pulse until it forms an
almost pastelike consistency. (Do not let mixture become liquid.)
Spoon into a serving dish.

Per serving: 53 calories, 3 g protein, 12 g carbohydrates, 1 g fat, 0
cholesterol, 424 mg sodium, 3 g fiber. Calories from fat: 5 percent.
