I had a gallon of peppers cheap from a restaurant supply house. Part of
them were used up as follows and it turned out pretty good....

      Title: Jim's Pimiento Sauce
Categories: Sauces, Condiments, Chiles, Jw, Tnt
   Servings: 1 cup

1 c jarred fire roasted sweet
            red bell peppers packed in
            brine
1/4 c brine from the pepper jar
1 tb puree of chipotles in adobo
1 tb Sach's habanero sauce with
            garlic and cumin
       1 tb water
       1 tb white vinegar
       1 tb ketchup
            white pepper, optional

Whiz peppers and brine to a pulp in a blender. Add the rest of the
ingredients and whiz again briefly to stir. Add water to thin as
required to get the pouring consistancy you want. Bottle. Strong roasted
red pepper flavour with a nicely balanced hint of chile heat, garlic,
spice, sweet and sour.
