[CH] Baby Backs ala Slanted Door

Baby Backs here are pork, so are spare ribs.  I know different parts
of the country have different names for cuts of meat.  I prefer Baby
Backs to spare ribs as they are meatier and well trimmed.  The
original recipe called for spare ribs sorry for the confusion.

For instance tri-tip is a very popular Que cut here in California, but
then I learned it isn't even available under that name elsewhere.
Hangar Steak is another yummy cut we can get.  Flap meat/steak is
popular in Asian and Hispanic markets here as well.  It is similiar to
flank steak or skirt steak.
