Great supper tonight -- taxidermist neighbor gave me another deer that he got with his bow -- he collects hides and capes for his business. Decided to share with our two oldest sons -- got it all boned out in an hour or so. Made some awesome stir-fry with a couple of rib-eye slices. Recipe follows: Venison rib eye steaks - sliced very thin 1 12 ounce can pineapple tidbits (drained, reserve juice) 1 - 2 bags frozen stir fry veggies Put steaks in freezer to set stiff, slice very thin. sprinkle with chili powder and soy sauce - marinate for 15 minutes. Heat about 1 tablespoon olive oil in hot wok until it just about smokes, sear the venison slices for a few minutes with two or three cloves of garlic and a tablespoon of chili powder. Remove the meat, add veggies and pineapple for stir fry (I used California Blend cause Daughter-in-law #1 is allergic to bell peppers). stir fry until crisp done - add meat and sauce Stir fry sauce Bring to boil reserved pineapple juice, two tablespoons soy sauce, one tablespoon red wine vinegar, a teaspoon or so ketchup, one teaspoon cayenne flakes -- thicken with cornstarch and pour over stir fried veggies and venison. ( I have used this same recipe and added a couple tablespoons crunchy peanut butter for a tasty peanut sauce). Serve over rice or noodles --
