Tortilla and Butternut Squash Soup Serves 12 to 14 3 tbsp. salted butter 3 cloves garlic, minced 2 c. diced onions 3 carrots, sliced 3 ribs celery, sliced 1 lb. butternut squash, peeled and diced 12 c. chicken stock 1 c. sherry 8 oz. salted tortilla chips 1/2 c. fresh cilantro leaves 2 c. shredded Monterey Jack cheese 1 can (4 oz.) diced green chilies 1 bunch scallions, sliced 2 tbsp. freshly squeezed lime juice 8 dashes green Tabasco sauce Freshly ground black pepper, to taste In a large stockpot, melt the butter over medium-high heat. Add the garlic, onions, carrots, celery, and butternut squash. Sauté for ten minutes, stirring frequently. Add the stock and sherry. Bring to a boil. Reduce the heat to medium and simmer until the squash is soft and tender (about 35 to 40 minutes). Remove from heat and stir in tortilla chips until wilted. Add the cilantro and cheese and let the cheese melt into the soup. Puree the soup in the pot using a hand blender or work in batches with a regular blender until completely smooth. Add the chilies and scallions. Stir to combine. Season with lime juice, Tabasco sauce, and black pepper. Return to the stove and simmer for an additional five minutes. Serve in deep, wide, colorful bowls. Sprinkle with blue corn tortilla chips, chunks of avocado, sliced scallions, Monterey Jack cheese, and a wedge of lime on the side. i subbed a large can of pumpkin for the squash...been trying to find something to do with pumpkin since seeing george's 400 pound pumpkin in the field...have a couple recipes for stew or soup in a pumpkin shell, that i think would be a spectacular presentation, but hard to do in the field...found this, and decided to do it instead of the peanut butter and (hot pepper) jelly soup that i had originally planned to serve... maybe someday i can convince george to let me cook a stew in one of his 400 pound pumpkins... <grin> had some stale corn tortillas that i subbed for the chips as thickener...used a package of my frozen green chiles from last year at the field (my last <sob> and there were *none* available this year <sob>...and a few dashes of my homemade habanero sauce in place of the tabasco ('cos i didn't have tabasco)...(cilantro?...in this house?...never!...)...none in my soup...add it you wish...watch the pot carefully and stir frequently after adding the cheese...the cheese tends to sink to the bottom and burn...not good... -- knoxbill The old lady who said there must be a devil, else how could they make pictures that looked exactly like him, reasoned like a trained theologian -- like a doctor of divinity. -- Robert Green Ingersoll
