I would, however, argue that, as we Chile-heads get used to our favorite fiery fruit, the definition of "moderation" changes. :-) My definition of comfortable heat levels (where the flavor really pours through the heat to enhance that of the food, with a pleasant burn) is, considerably hotter than that of many people, and no doubt lower (how much, I don't know, given that I've gone beyond nuclear all the way to plasma as my definition of "moderation" lately) than that of others. So how do we define "moderation"? Is it based on the individual's tolerance levels? Or is it based strictly on a set range of Scoville units?
