By the way and way way way off the general topic path. If I have over the course of years persuaded anyone to try goat meat I am totally disgusted with y'all if you roasted a billy. Billys are for making kids and she goats..... NOT for eating. The flesh of she goats is what one would use for food ( a billy is way too (maybe even three) rank.) She goats are what one might roast if one would use a fully grown goat as food. A young goat at the point of being weened is the best. Marinated and then roasted on a spit is the way to go. Save the blood. Makes for a nice sauce mixed with dried peppers, cumin and garlic. My Grandfather's second wife used to add the ashes from her licorice flavored cigarette. I supposed it changed the ph. Jose
