This is wonderful... I use nice hot Thai peppers or good small hot chili's.

Aromatic Chicken Stewed with Sweet and Hot Peppers

6 tablespoons unsalted butter -- or shepherd's sheep milk butter
1 large chicken -- cut into serving pieces
3 large onions -- sliced
2 each garlic cloves -- to taste, minced (2 to 3)
4 large green bell peppers -- cut into 1/2-inch-wide rings
salt and pepper -- to taste
1/4 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1 small hot chili pepper -- to taste (1 to 2)
5 1/2 cups tomatoes -- seeded and chopped

If desired, remove and discard the chicken skin. Rinse and pat the meat
dry. Heat 3 tablespoons of the butter in a large, wide pot or Dutch oven
over medium-high heat and sear the chicken pieces, in batches if
necessary, until lightly browned on all sides, 7 to 8 minutes. Remove from
the pot with a slotted spoon and set aside.

Add another tablespoon or two of the butter to the pot and cook the
onions, garlic, and bell peppers, stirring, over medium heat until wilted,
7 to 8 minutes. Place the chicken back in the pot. Season with salt and
black pepper, stir in the allspice, cloves, cinnamon, and hot peppers, and
pour in the tomatoes. Add enough water to barely cover the chicken. Cover,
reduce the heat to low, and simmer slowly until the chicken is very tender
and the sauce thick, about 1 1/2 hours. Just before removing from the
heat, swirl in the remaining butter. Serve hot.
