[CH] Sundays Dinner: Chile Cheese Burgers (adapted)

I adapted these from the new Bobby Flay book - Burgers, Fries & Shakes. Sooo delicious. I used lean turkey but the original recipe called for beef.
 
 I served them with Tater Tots (for Steve & Trev) and Oven Baked Sweet Potato Fries (for me). 
 
 Santa Fe Burgers
 
 Burgers:
 1 can green chile
 2 tbsp canola oil
 kosher salt and black pepper
 1.5 lb ground turkey
 4 hamburger buns, split; toasted
 Queso Sauce:
 1 tbsp unsalted butter
 1 tbsp white whole wheat flour*
 1.5 cups milk
 8 oz monterey jack cheese, coarsely grated
 kosher salt and black pepper
 
 Preheat oven to 375 degrees F.
 
 To make Queso: Melt butter in a small saucepan over MED heat. Whisk in the flour and cook for 1 minute. Add the milk, increase heat to HIGH, and cook, whisking constantly, until slightly thickened, about 5 minutes. Remove from heat and whisk in the cheese until melted; season with salt and pepper. Keep warm.
 
 Divide meat into 4 equal portions (about 6 oz each). Form each portion loosely into a 3/4" burger and make a deep depression in the center of each one. Season both sides with salt and pepper. Cook the burgers, using remaining 1.5 tbsp oil. 
 
 Place burgers on the bottom buns and top each with  few tbsp of the queso sauce, and some of the green chile. Cover with bun tops and eat immediately.
 
 Risa's notes:
 
 * Original recipe called for all-purpose flour. I used white whole wheat to up the nutrition.
 
 Also the original recipe called for roasting a poblano chile, peeling the skin off and chopping it. I didn't find a poblano locally so I used a can of green chiles instead. They are already roasted and peeled and makes it easier.
