Tom...Rael...I couldn't have said it any better. Yes, we are the walkers of the chile world; the 'tykes' that need smiles and understanding but never pity. We have found our Nirvana. We who enjoy a moderate level of heat truly understand the flavor and that flavor is not mitigated by the fact that one is rolling around on the floor, clutching one's throat and begging for something cool and healing. We may walk but we stop to smell the flowers (chile blossoms included) and enjoy the process of eating chiles, not just the afterrush. It is bliss to bite into a piece of chile that has texture, flavor, color and warmth that ties it all together. When I bite into a HOT chile, that's what I taste and the rest of the experience is diminished because I'm on my knees which have buckled under the onslaught. Anyone who considers this a pleasurable experience is, of course, welcome to enjoy it. Now, all this being said, we are people of common interest and respect on this list. We moderates will truly attempt to understand those who enjoy tongue-blistering experiences if you will attempt to understand those who are more gentle in their sensibilities. I am not a chile bigot; I just don't understand it. As Rael so thoughtfully explained, perhaps I'll grow up some day to become a "real" chilehead. Until then, I can't wipe the smile off my moderate little face as I go through life cooking with and eating moderate heat. SandyO CH #11146 and proud Grand Pooh Bear of the Moderate Corps
