A friend, former resident of New Mexico, has bemoaned the fact that New Mex chiles grown in Idaho don't taste like the chiles he knew in New Mexico. Apparently the New Mexico-grown chiles don't taste like they used to either, so the Chile Pepper Institute obtained some archived seeds and grew them out. Several tasters pronounced them much improved, so CPI offered the NewMex "Heritage" (their term) 6-4s this year. Seeds are $3 a pack, minimum order $15. Next year they'll be able to offer Heritage Big Jims too. My New Mex ex-pat friend is hugely enthusiastic, because even though Idaho-grown, they taste like the New Mex-grown chiles used to taste. The Heritage 6-4s have 5 times the aroma and flavor compounds than the non-Heritage 6-4s being grown. Margaret Lauterbach, standard disclaimer
