If you find a specialty food market that sells Calabrian chiles either  
whole or jarred, grab as many as you can as they are very hard to find  
but they have an amazingly appealing depth of flavor. They are small,  
red chile peppers grown in Calabria, Italy that are typically roasted  
or sun-dried with salt and then packed in olive oil and jarred. The  
fiery flavors are truly amazing, especially when roasted, and I love  
them in spicy pasta dishes, with giant prawns in grappa cream sauce,  
or in spicy aioli to dip artichokes or other grilled veggies into.
