Chipotle in adobo will be smokin' hot (I'm assuming you mean the canned 'wet' variety; will also add a bit more liquid to recipe). Dried/ground chipotle will be hot and a nice addition. Guajillo chiles could be mild, earthy-ish, but tasty addition. Or just toss in some smoked red savina (TM?), sing praises to El Grande, and eat, drink, and be chile...
