Hey Chileheads, After slavishly saving the carcasses from various animals for years for stock I discovered that it was easier to buy a slab of turkey knuckles at the discount grocery store when I wanted to make a meat stock. I do of course remain politically correct with reference to the list in that I added a sprinkling of chile powder to the pot. Hmm..... tasty. Yeah ...I know.... No one asked me.
