[CH] Spicy Mango Chicken recipe

              Spicy Mango Chicken
                       - Janet Smith
 
 Ingredients
 4 boneless, skinless chicken breast halves
  (or three leg quarters)
  Savory Spice Shop Mt. Evans Rub (or poultry rub of choice)
 1 tablespoon olive oil
 2 cloves garlic, peeled and minced
 1 (2 inches) piece fresh ginger root, minced
 2 mangos - peeled, seeded, and diced
 2 tablespoons red wine vinegar  
 2 tablespoons chopped fresh cilantro (dried works okay, too)
 liberal sprinkle of chile powder (I use Calvin's 2.0)
 
 Directions
 1. Preheat an outdoor grill for high heat, and lightly oil grate.
 2. Rub chicken with Mt. Evans Rub. Place on the prepared grill. Cook 10 to 15 minutes on each side, until no longer pink and juices run clear. Remove from heat, set aside, and keep warm.
 3. Heat oil in a medium skillet over medium heat, and saute garlic for about 1 minute. Mix in ginger and mangos, and cook 3 to 4 minutes, until mangos are tender. Pour in red wine vinegar.   Stir in cilantro and chile powder and remove from heat. 
 4. Spoon over the grilled chicken to serve.
 
 Serve with jasmine rice and stir-fried or steamed Asian vegetables
 Works really well to build a nest of rice, top with grilled
 chicken and top the whole thing with the Spicy Mango, and serve
 the vegetables on the side.
