Just one quick OT thank-you. To everyone who has ever stressed that I should get one of those chimney starters .... I found out that, contrary to what I thought, I did not have a second fire pan to use for starting the second batch of coals, and didn't really have much choice but to spend the extra money and buy one. My first attempt didn't work...not enough paper in the bottom portion, didn't burn high enough to really ignite the coals. Second attempt was different...flamed right up through the top as I added more small strips of paper through the side...the coals were ready about 5 minutes later...just about long enough for me to heat up the aromatics and put them in the bird. The smoker hit 400°F within about 15 seconds of being covered, but I suspect some of that time was just for the thermometer to adjust. After adding a 12 lb bird, it hit 400°F again in a few seconds. About an hour from now, I'll switch it over to smoke mode and do the real magic.
