Hey Chile-Heads, Some years ago after becoming a Chile-snob, I started to make my own Mexican Chorizo. Chopping and hand grinding the pork shoulder, adding fresh ground spices etc. The recipe always varied depending on my mood and the ingredients I had on hand. This year I will begin by adding Saigon Cinnamon to the mix. (should be interesting) And so it occurred to me to ask if anyone on the list had a killer Mexican Chorizo recipe that they might want to share. I would tell you mine but it's never the same. And my mom, now 88 complains that I add too much cinnamon. So who knows... What to do... Your's in Sausage, Hose-A
