Hey Terry, Tacos of whatever sort are like sandwiches. They are what you make of them. Good luck with the turkey roast. I would chop it up, brine/marinate it and smoke/roast it out on the patio in a large kettle grill. With a case of beer to keep me from drying out or over heating. Jose
