It is a wonderful garnish for Thai dishes!  Also in the Gai Krapao I don't 
ever use sugar or soy sauce, and always use 6 to 8 shallots thinly sliced.  
Prik kee neu (Thai chilles) really give it a great taste.  If you fry the 
minced chicken breast WITHOUT much stirring it becomes a little brown and 
makes for a richer taste.
