                     did just recieve a envelope in todays post from Dale in
the Deeper south (Tasmania) Oz.. and is quite impressed with Dale's smoked
Habs, they have  nice texture and colour with a hint of smokiness that is
quite different to Jim Cambells. I'm currrently suffering from Hunan Tongue
as a result of a cavalier approach to the actual taste test. Perhaps Dale
would care to give his smoking recipe to the list for the benefit of other
Aussie's who may like to try his method, e.g. wood used etc..
