Chipotle-tomatilla Salsa

Makes about 2 cups

1 pound whole tomatillos, husked
1 tbsp extra-virgin olive oil
1 small red or sweet onion, chopped fine
1/2 cup chopped fresh cilantro
2- 3 canned chipotle chiles, minced, or more to taste
1 tablespoon vinegar, preferably white or cane
1 teaspoon mexican oregano
1/2 teaspoon salt, or more to taste

Heat the Broiler
Place the tomatillos on a small baking sheet, covered with foil for easier
cleaning.  Broil the tomatillos for 15-18 minutes, turning occassionally,
until the tomatillos are soft and dark in spots.  Cool the tamatillos briefly.

Warm the oil in a small skillet.  Add the onion and saute until just
softened.  Transfer the onion to a medium bowl.

Chop the tomatillas fine and add them to the onion.  Stir in the remaining
ingredients.  
The salsa can be served warm or refrigerated, depending on the dish.

and HOT!
you can substitute jalapeno or serrano for the chipotles, but the chipotles
add an extraodinary flavor :)
