[CH] Chile Powder Beta Sampling in OZ / Recipe also..

ITS ARRIVED *** CALVINS 2000 ***
(my name for it)
Just got a sample packet from Calvin of his new  blend.
 Its similar in colour to his last Chile Powder, probably best described as
the colour of that north west TEXAS  landscape where Calvin lives..
 It looks great in the plastic jar it arrived in and I have since
transferred it to a small glass jar to see the colour better..
 the aroma is definitely different though. (Green would describe it best) If
one can describe it as such.
The grind is slightly coarser ??
The first taste again seems to be also green, then the heat comes in.
Wow $#^%&*$# this stuff is good.
I'll have to find another sealed shaker so that I can take it along when
eating out..
Actually i should use some to make a small bowl of red just for myself..

Recipe / Quick
I didn't cook tonight, just supervised the boy child..
Chicken and Avocado crepes .
Make you basic savoury crepe batter and make about 8 - 8 to 10 inch diameter
crepes.
make a basic white sauce, butter, flour, milk and add half a cup of cream
(Real not half and half) and half a cup of freshly grated parmesan cheese,
in double boiler cook till thick..
Chop some chicken up 3/4 to 1 pound add 2 chopped firmish avocado's, mix
with sauce and fill crepes. Sprinkle with Calvins 2000 Roll up and place on
buttered corning dish. cover with 1 to 1 and 1/2 cups of grated cheddar.
Cook in hot oven for 15 minutes or till brown.
I served this with some caramelised shallots, and the family wants it again
tomorrow night,  Chile Powder included..


I'll try Calvins new powder with some crayfish next. one of my mates is
going out west tomorrow so I have placed an order for some Yabby's (Aussie
Freshwater Crayfish)..

Although I would like to be living a lot closer to Abilene TX so that I
could visit Calvin to borrow a cup of this new Powder from time to time..

 p.s.
 I think that Aussie Customs and Quarantine  have torn up the dossier they
had on me and must be letting in any packages sent to me unopened. Its
probably cheaper than getting new drug sniffing dogs everytime I send or
receive a Chile product.. <G>
