Otay...  Here's a question.  Has anyone tried crab apple wood?  It *izz*
a *fruit* tree, but not like apple, pear, etc.

Yes, I have used crab apple wood with good results. You may want to let it
season for 6 months or so before using it. I once read where the wood of
choice is peacan, that's what I always use, I also throw on a coula
chickens and peacan smoke goes well with chicken also. Here in KC I grew up
smokin, parents used a Weber as a basinette. 

Also, I have smoked corned beef brisket. Really good but boil for 20 minuts
or so to get rid of some of the salt.
