[CH] That brown stuff

Does anybody have a recipe for the brownish colored habanero hot sauce
which you see once in a while (depending on where you look, I guess:-)?
I know I taste a bit of brown sugar and vinegar in there. I used to go
to a hot-food eating contest at alocal Thai eatery and this guy would
usually sell it from his trunk in baby food (!) jars after the shindig
was over.
