Carl - 

It's basically just the Japanese version of vodka.  Not quite as strong as 
the normal stuff, but still quite adequate.  A lot of times, the Japanese 
will drink it mixed with hot water or tea (not for me, thanks).  I'd try 
1/4-3/8 cup of vodka (non-flavored) as a substitute.

The umeboshi I've bought before usually include leaves of the red Perilla 
plant (Japanese name shiso) for coloring & flavor.  You might have to visit 
your nearest oriental food supply place to get them.
