Subject: [CH] chile/squash recipes?

I've got acorn squash going berserk in the garden.
It's invading the corn, which is not a problem. But
it keeps trying to climb the tomatoes and I have had
to redirect its eforts. Anyway, if even one tenth of the
blossoms end up bearing fruit, I will have a ton of acorn
squash on hand, and I am looking for a good CH-type
recipe... Anybody have a favorite they'd be willing to
share?

One I like is a stuffed acorn squash.
I make a stuffing out of Italian sausage, onion, garlic, mushrooms, chile of
your choice (or hab powder). Brown the sausage, drain. I then add a little
olive oil and some fresh thyme, a splash of red wine, depending on my mood
a diced tomatoe. Reduce this untill there is very little liquid. Cut the
squash in half and clean out the seeds. Salt, pepper, and hab powder the
inside of the squash. Put sausage mixture in the hollowed out part. Put
halves back together and wrap in aluminum foil. Place on weber on indirect
low heat for about 2 hours.
Mike, wishin I had some acorn squash, in KC

Scott... acorn squash is the only type I like... KCK
