Several things are available to you.  The ones I am familiar with
include carrots, corn starch, flour, powdered ingredients, and gum. 
None would have any noticeable impact on your acid.  All are readily
available.

In a prior thread on this topic, there was also suggested carageenan
(sp) and a couple of others which I am not familiar with.
