[CH] Thickeners

Arrowroot and cornstarch are terrific thickeners in many cuisines, while
others use rice flour and yet others use ground nuts (Mexican). The list
could probably be extended ad infinitem, but those are some of the
classic ingredients, along with those Jim mentioned.
