Craig,

First off I believe our expert resident Chef Chile is there at the Rain 
Forest!?!

I would recommend Emeril's restaurant there for hot and fiery, but my 
personal favorite for fine dinning is Le Cirque at Bellagio.  It is one of 
Jean-Georges most recent and acclaimed.  His fusion food is of the utmost 
quality and taste excitements to come along in a long time.  Our long time 
good friend is Paolo is the Sommelier having won out from over 800 applicants.
