[CH] white pepper

I have a question for the group.  What variety of pepper is used for the 
"ground white pepper" found in grocery stores?   I use this often to add 
interest to dishes such as chicken and rice without adding heat.  Actually I 
add 3 or 4 varities of peppers in small amounts to most "plain" dishes to 
make them spicy but not hot.
