	Relax, they are just doing what mother nature intended,
	which is to ripen.  The ripe red jalapenos are smoked to
	make chipotles.  You don't see them in stores for the 
	same reason you don't see red bell peppers as often or
	for the same price as green bells... $$$.  A plant that has
	peppers hanging around waiting to ripen is *not* producing
	more peppers, thus lowering yield/profits.  And if they are 
	picked and allowed to ripen, they are taking up space.  Why
	waste that space when you can sell them green?

	As to whether or not they are better, that is a matter of 
	personal taste.  I prefer them ripened, but I have never been 
	accused of having taste.
