[CH] Vegetarian Chili request

Hey Ch'ers.

I've volunteered to cook the chili for our big Ultimate tournament in
Portland and could use some ideas on making a vegetarian friendly chili.
We're going to make a couple batches, a relatively tame for the civilians
and another smaller one for the chili heads.  I'm open to experimenting and
playing around bit but need something that'll go over well.

Also, if anyone has experience in preparing 10-15 gallons of chili, please
pass on some hints.  I'd really appreciate it.
