Easy Hot Sauce
First fill your blender half way up with vinegar. Then add hot peppers with
the stems removed. You can add as many as you like just make sure your
mixture is at least 50% vinegar. You can also add garlic and other spices.
Let your blender run on the max setting until its all liquified. Then put in
saucepan and bring to a boil for 3 - 5 minutes. Put back into blender and
whir it about for a little while longer. Then put in canning jars and put
in a hot water bath for 10 min. Let cool, make sure the jars seal and age
for 2 - 3 months. I usually strain the sauce made from cayennes and other
thin skinned dry peppers. The Jalapenos and Habaneros make a great sauce
without straining. The Hab sauce is really great mixed with Italian
dressing over your favorite salad, lettuce, greens, cucumbers, etc.
