[CH] Gasmask in kitchen ?

A few days ago I tried frying pickled Jalepenios, just to see
if it would reduce the water and vinegar contents. ( Fresh
Jalepenios are not generaly available her in Norway. )
They turned out OK, but the large amounts of noxious fumes
where released in the process, and me not being quick to give
up on such an experiment found a WWII gasmask and continued
frying away. Shortly thereafter I heard someone entering the
house quickly followed by a loud coughing.... and then the
surprised look of my wife as she found me sporting a gasmask
in the kitchen (!)

At the time she wasn't the least bit amused, but we both find the
incident quite funny. I will not be doing more experiments on 
frying pickled peppers, but would like to know what was going
on. I suspect that more capsiasines were released into the
air than usual. Any explanation on the phenomena will be
welcome...
