I use an Excalibur, too, but only set the temp to 105 (pretty nearly the
lowest possible setting).  Our humidity is reasonably low enough that at
105 most chiles dry overnight, or in 48 hours at most which seems
sufficiently fast given I always imagine 105 causes less flavor loss due to
'cooking'.
