Check out Jeff Roses' pineapple ginger hab sauce.  Wonderful on chicken,
fish, shrimp, Chinese egg rolls, etc.   Here's his site

I make a lot of fresh salsas with mango and papaya, too. Love habs and
fruit. Just make as you would a tomato salsa subbing the fruit for the
tomato or put in instead of part of the tomato.  Good with avacado diced
along with the fruit, too.  Try it with refried beans, you may be pleasantly
surprised.
