[CH] Chiles Relleno

Hi Jonathan...I think that I posted this a couple of years ago, but here
it is again. This is a really light, no batter, chile relleno, done in
an egg wrap, rather than batter, hardly a recipe as such, simply take
the anaheim that has been fire roasted(Yes Doc, this can be done!!!)and
stuff it with cheese, your choice, we use aged cheddar, and make a thin
omelette, as in two eggs plus third cup of cold water, or a little more.
and skim an 8" teflon pan with this mixture, let it set a bit, lay the
chile in it, and fold the egg  around it....I always sprinkle the cheese
with either Calvin's or Jim's smoked hab powder, depending on whether I
want a smokey or plain hot relleno...I have also used jalapeno cheese,
and perked it up as well....if you are on a cholesteral reduced diet,
you could try egg beaters instead of the egg, but then you would still
have the cheese, right? Cant win, huh? As Chas says, eat healthy, die
anyway(eventually)(hopefuly, that event is a LONG way off!) Cheers, Doug

our lockers, went down there on her own and surprised a jerk going thru
the lockers...took his licence #, called the cops, and he is in the
cells tonight!!!Pretty good going fer an old gal!!Who should not have
gone down there on her own!!!
