I found that another cut of meat that works well for jerky is a London
Broil. Its just about the right height for strips and is usually pretty low
fat. If you get it about half frozen you can get nice even slices just about
whatever thickness you want. 

The Chile Cheese Head,
(Even the Packers were hot this weekend.)
