True enough! By 'key' I didn't necessarily mean 'alot'. It is just one of the seasonings that makes chili powder taste like chili powder. Fresh ingredients are also best, as mentioned in the other post, but are not practical on a larger scale- I was just giving my perspective as an evil corporate type ;-) -Jim C MWPH
