Well, since we had so much fuzz about NaOH, I am forwarding this. As 
I suspected, food industry uses whatever chemicals they can get away 
with... Who needs "intensely red" ham? GEEZ....

Subject:        	Foodsafe: NaOH & dye coloring of ham

Question was recently raised about the practice of placing NaOH in
water which apparently helps dissolve a red dye, the solution of which
is then injected into pork hams to give them a more intense reddish
color.  Still unknown whether this is in addition to nitrite & salt
curing.  Practice reported to be common in Costa Rica.
