Take equal parts fresh garlic (minced), ground black pepper, ground rock
salt, thyme (fresh is best but dried, rehydrated with a little water is Ok),
add some melted beef dripping (or a drop of olive oil) enough to make a
'paste', cover the beef in ther mixture, wrap in foil (or put in self
basting oven roaster).

Cook on high (200 C) for 45 minutes, remove foil or roaster lid then for
rest of time on 150 C until cooked as well as you like.

tasty but not over spicy, enjoy
